Why "on the side"???

First of all, Merry Christmas!!!!!! And being that it is the holidays and I have been busy spending time with my family instead of blogging much, I wanted to fill everyone in on why my blog is called "Deals on the side". I LOVE finding great deals, but first and foremost I am a wife and mother. I love my family and I am grateful enough to be able to be home to take care of them every day. So I thought I would share a couple of recent pictures that show how much fun we've been having lately, and also why my "on the side" has been a little slow lately. I hope everyone has a safe and wonderful holiday. May God bless you and your families.



This is my little munchkin Jaylee. She is almost 11 months old. She's my cuddler and I just can't get enough of her.




And this is my 2 year old Jillian. She never fails to make mommy laugh or cry daily. Just the other day she told me that I am her best friend and she loves me soooooo much. Hahahaha. Of coarse she manages to say cute things like that in between terrible-two tantrums!!!




Yes, that is an extra kid in the high chair! I babysat for a friend for a couple of days this week. Her name is Amaya and she is 7 months old. Surprisingly, everyone gets along fairly well and there were no complete breakdowns.





And tonight, Jillian, with the cookies, milk, and a carrot that she picked out for Santa and the reindeer. That face just spells trouble!

We had intentions of getting my 2 year old the Kitty with the $10 Gift Card I won, but once we got to Build-a-bear there was a great sale going on with Molly and Hal Moose! The kids loved them and to our suprise they were just marked down that day from $18 to $12/moose. Plus, when you buy 2 you get a storybook (15.99 value) and free calander with any purchase! So.....we got Molly and Hal, kissed our hearts, blew in their stuffing, gave them BIG hugs, and washed them up. Those of you who have been there know what I am talking about. Using my stockpile today part II

I just had to add to this today because I couldn't get my mind off finding a good breakfast muffin. So here's what I found, and my daughter, Jillian, had a good time helping as usual.



Preheat oven to 400 degrees F.
Grease a 12 cup muffin tin.
In a mixing bowl, lightly beat eggs; add milk and oil, stirring until just blended.
Stir in flour, oats, sugar, baking powder, salt, nutmeg, and cinnamon, mixing until only just moistened (do not overmix).
Gently fold in the apples.
Spoon batter into the muffin tin, dividing evenly among the cups.
Bake in a preheated oven for 15-20 minutes or until a toothpick inserted comes out clean.
Cool in pan 5 minutes before removing to a wire rack to finish cooling.
Serve warm or cool; store unused portions in an airtight container.

Using my stockpile today!

Today I wanted to prepare and freeze the sweet potatoes I got for .33/lb at walmart last week.

I steamed all 8.78 lbs of them, mashed and added a little brown sugar and unsalted butter, and stored them in ziplock freezer bags lying flat for easy rewarming.



Next, I was actually looking for a good breakfast blueberry muffin that I could make a couple batches of and freeze, but instead I found this GREAT blueberry muffin strussel recepie that is probably more of a dessert muffin. I found it on a site called supercook.com. This site is pretty awesome. You can tell them every ingredient in your house and they will tell you what recipies you can make.


1 1/2 cups all-purpose flour
3/4 cup white sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
1 egg
1/3 cup milk
1 cup fresh blueberries (I used frozen)

FOR TOPPING
1/2 cup white sugar
1/3 cup all-purpose flour
1/4 cup butter, cubbed
1 1/2 teaspoons ground cinnamon

DIRECTIONS

  1. Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups or line with muffin liners.
  2. Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder. Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup. Mix this with flour mixture. Fold in blueberries. Fill muffin cups right to the top, and sprinkle with crumb topping mixture.
  3. To Make Crumb Topping: Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking.
  4. Bake for 20 to 25 minutes in the preheated oven, or until done. Serves 8.

My Super Savings Saturday!

I dropped the kids off at Grandma's house around naptime today and did some shopping I have been needing to do. On my list of things to do were conquer that Walmart shopping list, search for a winter coat for Jaylee, renew my membership while getting formula and doing a little taste testing at Sam's Club, and get gas in the van. I did it all. I'll cover the Walmart trip in my next post. Right now I want to show you what I got while I was thrift shopping today. You see, our first daughter was born in August and our second in January. That means when people told us, "you guys should be all set" they were wrong. Jaylee is starting to grow out of her 6-9 month clothes now and I went downstairs to grab the 12 month bin only to open it up and realize it was all summer clothes! Duh, Jillian was 12 months in the summer! So off to the thrift stores I go!

How I used my stockpile today

My two year old and I started out by making some Fruit and Jello cupcake Jigglers. I saw a recipe for these in the sunday inserts a couple weeks back and they made my mouth water. Plus I have all of that FREE Meijer Jello to use. I didn't have everything they called for so I deviated from the recipe a bit:



2 - 4 serving packages of Jell-O - I used 1 strawberry and 1 orange
1 can of crushed pineapple - I only had chunks..so I crushed them myself
frozen fruit

drain the can of pineapple into a measuring cup, then add enough water to make 2 cups. Heat water and juice until boiling. Add water and juice to bowl with Jell-O in it. Stir until disolved. Then add pineapple. I also took some mixed frozen fruit, minced it in my magic bullet, and added it to the Jell-O mixture. Pour into cupcake cups and refridgerate for 2 1/2 hours. Their recipe also called for a can of cranberry sauce and walnuts...that could be good.

Then, after naptime, we made daddy some no bake chocolate oatmeal cookies.



1/2 cup butter or 1 stick
2 cups sugar
1/2 cup milk
4 Tbsp. cocoa
1/2 cup chunky peanut butter
1 1/2 tsp. vanilla
3 cups quick oats

Heat butter, sugar, milk, and cocoa until a rolling boil. Let boil for 1 1/2-2 minutes. You should have the other ingredients prepared in another bowl and wax paper or tin foil already spread out on the counter or flat surface. Pour the boiling mixture into a bowl with all other ingredients. Quickly mix and spoon cookies onto your flat surface. If done correctly, the mixture should harden quickly.


For dinner I mixed up a concotion. Don't know what to call it, but it was pretty good!



1 lb. venison from our freezer
1 package of green giant steamer (free at Meijer this week with $1/1 coupons)
1 can cheese soup
milk - I didn't measure
potatoes - enough to fill the bottom of a large baking pan
shredded cheese ($3/2 at walgreens this week)
1 jar salsa (I have a ton of these from the $1.50/1 at Meijer making them .39 each)

Grands Biscuits that I got for free at Meijer with $1/1 coupon last week.

I browned the venison while cubbing potates and putting them in the bottom of the baking pan. Layered veggies on top of potatoes and venison on top of veggies. Then I mixed the cheese with milk until it was pourable. Poured that on top and salsa on top of that. Stuck it in the oven, covered, at 400 for about an hour. When it was just about done I layered some shredded cheese on top. Biscuits on the side!

The Holiday Taste of Sam's Club

Organizing my coupons

I've been a little behind lately due to my children being sick. So for two weeks in a row I was unable to clip or organize my coupons. I also had extras from taking our recycleables in and checking out the newspaper dumpster...JACKPOT! Anyone who knows me knows that I can't stand to be unorganized. If I'm unorganized my day goes bad...organized my day can flow smoothly. So yesterday I worked long and hard to get reorganized. When I first started couponing I looked a lot for good organization methods. There are many ways people organize thier coupons, but this is how I've chosen to do mine.
I usually cut all coupons on sunday night, then organize on Monday during naptime, then plan my trips by Tuesday morning. After I cut all my coupons from the inserts I spread all of the catagorized envelopes out on my table and start sorting.

Each envelope has an index card inside it, standing on it's side with the name of the catagory on it sticking up above the envelope. This way the catagory can be easily found.

I am in need for revamping my catagories but here are the catagories I have now (in no particular order):

When I'm finished sorting I put all the coupons in thier envelope and put the envelopes into a shoe box.
My shoebox is always equiped with, of coarse, coupons, scissors, a handheld calculator, and extra paperclips to help keep organized in the store.

As I make my shopping lists I take out coupons as needed and put them in a binder clip along with my shopping list for that store. When I'm finished adding items and coupons to that list I put a sticky with the name of the store on the front of it. Then I'm ready to head to the stores! If you are kidless while shopping, those binder clips work great for clipping your shopping list to the cart right in front of you where you can see it.
